We have a slow cooker, it’s been gathering a lovely layer of dust on it since we last used it, probably a year ago?! One of the things I want to do more of this year is cook, and until recently I didn’t realise just how wonderful a slow cooker is. Gone is the layer of dust and it is now sitting proudly on the counter top producing many wonderful smells. The most recent thing we cooked in it was chicken fajitas. We are big fans of mexican food in this house, you cannot beat a good burrito. So it’s great when your whole kitchen smells of mexican food for a whole afternoon/day whilst your spicy chicken and peppers cooks away. I was so hungry by the time it came to actually eating the food.
Ok so first of all you will need
• chicken breasts
• peppers – I used one yellow and one orange
• honey – half teaspoon
• cumin – teaspoon
• paprika – teaspoon
• tomatoes – tinned or fresh
• sour cream
• tortilla wraps
Plus anything else you like to go with fajitas. We like mushrooms and refried beans in ours so we added those as well.
If you like it spicy then add jalapenos, or even some of this, it is amazing.
I started by putting a layer of tomatoes on the bottom of the slow cooker. After chopping the onion, mushrooms and peppers and mixing them in a bowl with the spices and lime juice I put half of the mix on top of the tomatoes. Then put the chicken breasts on top of that, spread the honey on both of them and then put the rest of the veg over the top and that’s it. Put the lid on, and let it cook away for 4 -6 hours on low.
Just before serving make up your extras – salsa or guacamole. I love guacamole, I could eat it all day long. We used to just buy it already made but again its super easy to make. We put the juice and zest of 1 lime into a bowl, add the avocado and a bit of coriander and mash. Super easy and super tasty.
Then shred the chicken using two forks, grab some wraps and tuck in. This has definitely become a favourite of ours, we don’t make it spicy so that Clem can also enjoy it. You could do it with beef, pork or just lots of yummy veggies. I will definitely be using our slow cooker more, I really like the fact you don’t have to worry about cooking dinner after a busy day because it’s been cooking away all day. Obviously you do need to be a bit organised, and get it on early enough other wise you might be eating extremely late!
